Dough mixer
The dough-mixer is the biscuit making machinery which is utilized for mixing different ingredients like flour, water, sugar, fat and other chemicals which are used to make the dough soft, hard or fermented for fabricating biscuits.
A dough-mixer consists of a base plate and there are two side frames which are fitted over the base plate so that it can take the mixing chamber's load that is fitted on the side frames. There are two sigma or Z type mixing blades in the mixing chamber which rotate in opposite directions at different speeds to mix the several types of hard or soft dough for obtaining the required glutton of dough. For tilting the mixing chamber, a tilting device is used which is operated electrically and it is attached to the mixer which helps in unloading the mixed dough. These plants are covered from all sides in order to avoid accidents and dust.
Rotary moulder
The manufacturing plants of biscuits consist of rotary moulder which is used for pre baking forming of cookies, glucose and all types of cream biscuits and biscuits of sweet variety. The rotary moulder consists of the hopper which is fed with the dough that is required to be molded and then the dough is forced into the cavities by the forcing roller. The molding roller cavities are manufactured from gun metal which are coated and engraved with food grade Teflon. A knife is used to clear the excess dough which is made from tool steel and the holder holds it to guarantee uniform filling in the cavities.
The discharge cotton web is conveyed by an adjustable rubber roller which presses it against the molding roller uniformly for transferring the molded pieces perfectly to the web from the molding roller. The rotary moulder consists of three drives which are used as the density of the dough influences the forcing roller to force the dough into the cavities for molding. The production speed influences the die roller's speed. The shape of the biscuits is influenced by the speed of the discharge web which is produced across the web or along the web.
Rotary laminator or cutter
The Biscuit Plan uses single head rotary lamina-tor or cutter which is responsible for printing fine designs on the dough sheet which is fed continuously and also helps the dough piece to cut out individually. The rotary cutter consists of AC frequency controller which controls the speed and a helical geared motor for operating. The die of different sizes is accommodated by the cutting roller. The anvil roller which is rubber lined is able to adjust the height so that on both sides the pressure is controlled independently and in parallel. The cutting web's friction drives the anvil roller and a separate drive is used for powering it independently. Guards are used to provide the cutting rolls for safety and if the guard is removed the motor stops immediately.
